Fine Sooji (Chiroti Sooji) - 1 cup
Maize Flour/Cornmeal (Makai ka aata) - 1/3 cup
Special Masala* - 2 tsp
Chilli Flakes - 1 tsp or as per taste
Ginger Powder - 1 tsp
Refined Oil - 2 tsp
Salt to taste
Water - 1/2 cup approximately
Oil for frying
1. Mix all the ingredients nicely except water and oil for frying.
2. Gradually add water to make a soft dough.
3. Cover and rest the dough for about 20 minutes.
4. Make small and smooth balls of desired size.
5. Roll out each ball into small even pooris.
6. Heat the oil for frying in a deep Kadahi.
7. Fry the pooris on both sides.
8. Hot pooris can be served with any curry of choice.
