Tofu (Soy paneer - cut into cubes) – 100 gm
Onion (cut in long slices) – 1 medium
Bell pepper (cut in long slices - yellow or red to make it colorful) – 2 nos.
French beans (3" long pieces) – 5-6
Ginger (minced or grated) – 1 tsp
Coriander leaves (cilantro) – few sprigs (chopped)
Salt – as per taste
Oil - 1.5 tsp
For the sauce:
Soy sauce – 1 tbsp
Brown sugar – 1 pinch (3 finger pinch)
Chilli flakes – as desired
1. Heat oil and add all veggies (except coriander leaves). Stir fry for few minutes.
2. Make space in the center of pan, add and fry tofu for 2 minutes.
3. Mix tofu and veggies and add salt.
4. Make space in the center of pan again. Add soy sauce (I use low sodium sauce), brown sugar and chilli flakes, and stir to make a uniform sauce.
5. Mix all stir fried veggies and tofu with the sauce.
6. Add coriander leaves. Serve with hot steamed white rice.
