Fine Sevai, roasted - 2 cups
Finely chopped vegetables (beans, carrots, capsicum) - 1/2 cup
Green chilli, finely chopped - 1
Curry leaves - 6-7
Roasted cashewnuts - 6-7
Mustard seeds/rai - 1 tsp
Refined oil - 1 tbsp
Turmeric powder - 1/2 tsp (optional)
Salt to taste
1. Heat oil in kadahi, add mustard seed/rai and allow it to crackle.
2. Add green chillies and curry leaves followed by the vegetables.
3. Add turmeric and salt and fry for 3-4 min. or till the vegetables are soft.
4. Add sevai and fry for 1 min.
5. Add water such that sevai is just and completely immersed in water.
6. Once it starts boiling, reduce the heat till the sevai is almost dry.
7. Remove from heat, add cashewnuts and cover for 5 min.
8. Serve with your favourite chutney/sauce.
