Eggs – 3
Onion – 1 (finely chopped)
Mixed Veg – 1 cup ( cut to approx. 1 cm cubes)
(carrot, peas, beans, capsicum)
Black Pepper powder – ½ tsp or as per taste
Oil – 1 tbsp
Salt to taste
1. Heat oil in a pan. Add onion and saute for 2 mins.
2. Add all the veggies and salt and saute till they soften.
3. Break eggs in a bowl, add salt and pepper and beat well.
4. Add beaten eggs to the veggies and keep stirring till cooked.
5. Serve hot with bread/roti/paratha.
