Potato (Aaloo) – 6-8 (medium sized, Parboiled)
Olive oil – 1 tbsp
Black pepper – 1 tsp
Dried basil – 1 tsp
Peanuts – 2 tbsp
Salt as per taste
1. Peel the potato and cut into 4 pieces.
2. Dry roast peanuts and coarsely crush the peanuts.
3. Heat kadai and add potato and olive oil to it.
4. Fry potato for 3-4 mins on medium heat.
5. Add salt and cook the potatoes till done.
6. Add basil and black pepper and stir for another 2 mins.
7. Remove from heat and add the crushed peanuts.
8. Serve hot with Mayonnaise dip.
