Aaloo(Potato) - 3 medium
Palak - 1 bunch, medium size
Onion - 2, medium
Tomato - 2, medium
Garlic - 1, peeled, chopped
Kasoori methi - 1 tbsp
Ginger powder - 1 tsp
Turmeric powder - 1/4 tsp
Freshly crushed black pepper - 1.5 tsp
Whole dry red chilli - 1-2
Mustard oil - 2 tbsp
Salt to taste
1. Peel and dice the aaloo, finely chop onion and tomato, keep aside. Wash the palak thoroughly and fine chop it.
2. Heat the oil in a kadahi, add diced aaloo and fry. Add salt and and fry till aaloo is cooked.
3. Remove aaloo from the oil and keep aside.
4. Break the red chillies in 2-3 pieces and add to the same oil.
5. Add chopped garlic and fry till it starts changing its colour.
6. Add kasoori methi and fry for 1 minute.
7. Add chopped onion and little salt, fry till they are light brown in colour.
8. Add chopped tomatoes, salt , turmeric and ginger powder, mix well.
9. Cover and cook till tomatoes are soft and mushy.
10. Remove the cover and fry the tomatoes on medium heat till oil separates from the sides.
11. Add chopped palak and cook for 1-2 minutes till palak becomes soft.
12. Add fried potatoes and mix well. Cover and cook for 2-3 minutes on medium-high heat, mixing intermittently.
13. Add freshly crushed black pepper and mix well.
14. It can be served with rice-dal or roti/paratha.
