Aaloo(Potato) - 4, medium
Fresh Methi(fenugreek) leaves, chopped - 2 cups
Dry red chilli - 1
Turmeric powder - 1/4 tsp
Mustard oil - 1 tbsp
Salt to taste
1. Peel, wash and half the potatoes lengthwise and then make thin slices, approximately 2mm thickness.
2. Heat oil in a kadahi. Break the red chilli in 2-3 pieces and add to the hot oil.
3. Add the sliced potatoes and turmeric powder.Fry for 2-3 minutes on high heat, or till you see brown spots on the surface of potato.
4. Reduce the heat to medium and cover and cook for another 2-3 minutes, stirring intermittently.
5. Add chopped methi leaves and salt. Mix properly.
6. Cover and cook till potatoes are done. Keep stirring intermittently.
7. Fry aaloo methi on high heat for few minutes.
8. Aaloo methi can be served hot with rice-dal/ paratha /poori/ chapati.
