Carrot - 500 gm (grated)
Milk - 1/2 cup
Sweetened Condensed Milk - 200 ml
Sugar as per taste (as the condensed milk is sweetened)
Ghee/Clarified butter - 2-3 tbsp
Almond - 25 gm (coarsely powdered)*
*(Roasted almonds in microwave for 2 min and powdered)
Saffron strings - 1/4 tsp
Freshly crushed cardamom powder - 1/2 tsp
Raisins and cashew nuts for garnishing
1. Take a deep bottomed microwave safe vessel, mix carrot and milk and microwave on high for 15 minutes. Let stand for few minutes.
2. Remove and stir, mix condensed milk and microwave for another 15 minutes. Let stand for few minutes.
3. Remove and stir, add sugar, ghee, cardamom powder and almond powder and microwave for 6-8 minutes.
4. Garnish with saffron, raisins and cashew nuts fried in ghee. Serve hot or chilled.
