Sponge Gourd (Nenua - नेनुआ) - 500 gm
Onion (medium size) - 1 (finely chopped)
Garlic Paste - 1 tsp
Mustard Oil - 2 tbsp
Fenugreek Seeds (Methi - मेथी) - 1 pinch
Dry Red Chilli - 1
Haldi - 1/4 tsp
Salt to taste
1. Wash, peel/scrape and slice nenua into small pieces.
2. Heat oil in a kadahi. Add methi.
3. When methi turns brown, add red chilly and onion. Fry till onion turns pink.
4. Add nenua, garlic paste, haldi and salt. Mix well.
5. Cook on high heat for 2-3 mins and then reduce heat.
6. Cook covered stirring intermittently till nenua is done. Sprinkle some water if rquired during cooking.
7. When no excess moisture is left, remove from heat and serve.
