Lady Finger/Okra (Bhindi - भिन्डी) - 250 gm
Garlic paste - 1 tsp
Yellow Mustard Paste (पीला सरसों) - 2 tsp
Red Chilli Powder - 1/2 tsp
Fenugreek Seeds (Methi - मेथी) - 1/4 tsp
Haldi - 1/4 tsp
Green Chilli - 1
*Dried Raw Mango (खटाई) - 1 small piece
Mustard Oil - 2 to 3 tbsp
Salt to taste
1. Wash bhindi and cut into about 1.5" pieces.
2. Heat 1 tbsp oil in a non-stick pan. Add bhindi and fry lightly.
3. Remove fried bhindi from pan and keep aside.
4. Heat rest of the oil in a kadahi. Add methi and green chilli.
5. When methi turns brown, add garlic paste and fry for a while.
6. Add haldi and red chilli powder. Fry a little.
7. Add mustard paste and stir for 15 sec. Add fried bhindi and salt.
8. Stir for a minute, add 1 cup water, khataaee* and cover.
9. Cook on medium heat till gravy thickens and bhindi is done.
10. Serve with roti/paratha.
