Lady Finger/Okra (Bhindi - भिन्डी) - 500 gm
Onion - 3 (medium size, sliced lengthwise)
Ginger-Garlic Paste - 2 tsp
Green Chilli - 2 (slit)
Jeera Powder - 1 tsp
Black Pepper Powder - 1/2 tsp
Garam Masala Powder - 1/2 tsp
Haldi - 1/2 tsp
Fenugreek Seeds (Methi - मेथी) - 1/2 tsp
Red Chilli Powder - as per taste (optional)
Mustard Oil - 3 tbsp
Salt to taste
1. Wash bhindi and cut into about 1.5" pieces.
2. Heat oil in a kadahi. Add methi.
3. When methi turns dark brown, add green chilli and onion.
4. Stir for 2 mins. Add haldi and bhindi. Fry for 2 mins.
5. Add ginger-garlic paste, jeera powder, black pepper powder, red chilli powder.
6. Fry till oil separates. Add 2 cups of water. Cook till done.
7. Add garam masala powder, mix and remove from heat.
8. Serve with roti, paratha or poori.
