Lady Finger/Okra (Bhindi - भिन्डी) - 250 gm
Methi - 1/2 tsp
Dry Red Chilli - 1
Haldi - 1/4 tsp
Mustard Oil - 3 tbsp
Salt to taste
1. Wash bhindi and cut transversely to about 1 cm pieces.
2. Heat oil in a kadahi. Add methi.
3. When methi turns dark brown, add red chilli and bhindi.
4. Add haldi and stir intermittently on medium heat without covering.
5. When bhindi starts becoming crispy, add salt. Stir intermittently for further 2 mins.
6. Cover, reduce heat and simmer for 2 mins.
7. Remove from heat and serve.
