Baigan (brinjal) - 500 gm
Aaloo (potato) - 250 gm
Mustard Oil - 6 tbsp
Garlic Paste - 1 tbsp
Red Chilli Powder - 1 tsp or to taste
Methi Seeds - 1/2 tsp
Haldi Powder - 1/2 tsp
Salt to Taste
1. Wash and cut baigan lengthwise in small pieces.
2. Peel, wash and cut aaloo in small pieces.
3. Heat oil in a Kadahi. Add methi seeds.
4. When methi turns colour, add baigan and aaloo.
5. Stir and add haldi. Cook uncovered with intermittent stirring.
6. When browning starts, add garlic paste and red chilli powder. Mix well.
7. Add salt and cook covered on low fire till done.
