Oat - 1 and 1/2 cup
Carrot - 1 (finely chopped)
Capsicum - 1 (finely chopped)
Onion - 1 (grated)
Green Chilli - 2 (cut in two pieces each)
Green Peas + Sweet Corn - 1/2 cup
Curry Leaves - 8 to 10
Tomato - 2 (finely chopped)
Black Mustard Seed - 1 tsp
Refined Oil or Ghee - 1 tbsp
Water - 3 cup
Haldi - 1/4 tsp
Salt to taste
1. Heat oil or ghee in a Kadahi.
2. Add mustard seeds and curry leaves followed by onion and green chillies.
3. Fry for one minute and add all the vegetables and oat.
4. Stir for five minutes. Add tomato, haldi and salt.
5. Stir for another three minutes and add water.
6. Allow to cook under cover on low heat stirring intermittently.
7. When upma thickens, remove from heat and serve hot.
8. If desired, add one more cup of water to get upma of Khichadi consistency.
