Potato (small size) - 500 gm
Onion (medium size) - 4 nos
Garlic paste - 1 tsp
Ginger paste - 1 tsp
Turmeric powder - 1/2 tsp
Red chilli powder - 1/2 tsp
Coriander powder - 1 and 1/2 tsp
Garam masala powder - 1 tsp
Salt - As per taste
Mustard oil - 4 tbsp
Water - 4 cups
1. Boil and peel potatoes (Aaloo).
2. Fry with 1 tbsp oil in a kadahi on low heat till light brown. Keep aside.
3. Fry half of the onions in 1 tbsp oil till brown. Grind to paste and keep aside.
4. Fry rest of the onions in 2 tbsp oil till transparent.
5. Now put onion paste and all the spices except garam masala in it and fry on low heat for 10 min.
6. Add fried potatoes and fry for 5 min more sprinkling water till oil separates out from spices.
7. Pour rest of water, stir well, add salt, cover with a lid and cook on high flame for about 4-5 min till gravy thickens.
8. Sprinkle garam masala powder 2 min before putting off gas.
9. Transfer into a serving dish and garnish with a tsp of hot ghee and fresh coriander leaves. It pairs well with hot paratha or puri.
