Sooji (Semolina) – 2 cup
Oil – 2 tbsp
Ghee – 1 tsp (optional)
Mustard seeds – 1 tsp
Urad dal – 1 tsp
Chana dal – 1 tsp
Peanuts (roasted, and halved) – 1 tbsp
Curry leaves – 1 sprig
Onion – 1 medium (chopped)
Mixed vegetables (peas and chopped/ julienned carrots, French beans, etc) – 1 cup
Tomato – 1 medium (chopped)
Green chilli – 2-3 (chopped)
Ginger paste – 1 tsp
Salt – as per taste
Water – 4 cup
Coconut /any other nut flakes – as desired for garnishing
1. Heat oil in a kadai and add mustard seeds. Let crackle.
2. Add the dals and fry till they redden.
3. Add peanuts, stir and add curry leaves.
4. Now add onion and sauté till translucent.
5. Add the mixed veggies, tomato, green chilli and salt.
6. Saute till the veggies are cooked and tomato softens.
7. Add ginger paste, stir for a few seconds and add water.
8. Allow the water to boil for a minute. Lower heat and add sooji slowly, stirring continuously, so that no lumps are formed.
9. Keep stirring on low heat till sooji is cooked.
10. Remove from heat and keep covered for 5 minutes.
11. Garnish with nut flakes and serve with any hot and sour chutney, like tomato or brinjal chutney.
