Atta – 2 cup
Mustard oil – 1 tbsp
Salt – as per taste
Turmeric powder – ¼ tsp (optional)
Ajwain – ½ tsp
Mangraila – ½ tsp
Onion – 1 medium (finely chopped)
Coriander leaves – as desired (finely chopped)
Ginger – 1” piece (finely grated)
Green chilli – as desired (finely chopped)
Water – as required for making the dough
Refined oil – as desired for basting parathas
1. Mix all the ingredients together, adding little water at a time, to get a soft roti-like dough.
2. Keep aside for at least 30 minutes, then knead again for a minute.
3. Divide the dough into 8-10 parts and roll into round parathas.
4. Make the parathas on hot tawa, basting with refined oil as desired.
5. Serve hot, topped with butter. Tastes best when eaten with curd and chutney of your choice.
