French Beans - 500 gm (finely chopped)
Refined oil - 2 tbsp
Mustard seeds - 1 tsp
Urad daal - 1 tbsp
Curry leaves - few sprigs
Green chilli - 2-3 (chopped)
Dry red chilli - 1-2
Salt - as per taste
Turmeric powder - 1/4 tsp
Coconut milk - 1 tbsp
Fresh coconut (finely shredded) - 3/4 cup
1. Wash french beans and microwave at high for 3-4 minutes.
2. Heat oil in a kadai, add mustard seeds and let crackle.
3. Add urad daal and fry till daal turns light brown.
4. Add whole red chilli and fry for 2 seconds.
5. Add green chilli, curry leaves, french beans, salt and turmeric powder. Mix and cook on low to medium heat for 5-7 minutes or till fried aroma comes out.
6. Add coconut milk, increase the heat to high and fry till moisture is absorbed.
7. Sprinkle shredded coconut and mix. Reduce heat to low and keep stirring for 1-2 minutes.
8. Serve hot with rice and sambar or daal. You can even eat it with parathas.
