Masoor dal – 1 cup (soaked)
Garlic paste – 1 tbsp
Red chili powder – 1 tsp or as per taste
Salt – as per taste
Turmeric powder – ½ tsp (optional)
Mustard oil – as required for frying
Alternatively:
Chana dal – 1 cup (soaked)
Onion – 1 medium (finely chopped)
Green chili – 2-3 (finely chopped)
Coriander leaves (finely chopped) – 1 handful
Salt – as per taste
Turmeric powder – ½ tsp (optional)
Mustard oil – as required for frying
1. Grind the soaked dal in a mixer, adding a little water as necessary, to get a smooth thick paste.
2. Add the other ingredients, except mustard oil, and whip with a spoon or hand till light.
3. Heat mustard oil in a kadai till smoking hot.
4. Drop the desired quantity(ideally ½ - ¾ tsp) of batter into the hot oil and fry till golden brown.
5. Serve hot phulauris with chutney of your choice.
