Maida - 2 cups
Fine sooji - 1 tbsp
Butter (salted) - 100 gm
Sugar - 3/4 cup
Vanilla essence - 1/2 tsp (or as desired)
Cashewnuts (Halved) - Few pcs (for garnishing)
1. Grind the sugar to a fine powder.
2. Beat butter and sugar powder together till fluffy.
3. Add maida, sooji and vanilla essence. Mix well to get soft and fluffy dough.
4. Make balls, of 1 and1/2 cm dia, from the dough, and keep them on a greased baking tray.
5. Press halved cashewnuts on top of each ball, lightly.
6. Preheat electric tandoor till red hot.
7. Put the baking tray inside for 1 min, then switch off the tandoor.
8. Leave the tray inside for 10-15 mins. (Keep checking the browning of the nankhatais after 10 mins)
9. Take the tray out, allow the nankhatais to cool to room temperature and serve.
